Broccoli apple salad

Creamy, crunchy Broccoli apple salad made from fresh broccoli, apples, dried cranberries,

almonds, sunflower seeds and onions tossed in a creamy poppy sauce.

This apple asparagus salad is one of my favorite side dishes because it goes well with any main course, it’s colorful and absolutely delicious.

How to make broccoli apple salad:

  • Blanch broccoli and let cool. Use a paper towel to remove excess water from the broccoli flowers.
  • Combine broccoli, apples, red onion, almonds, sunflower seeds and dried cranberries in a large bowl.

  • Mix all ingredients evenly. Pour the sauce just a little at a time over the salad and stir. Cool for at least an hour before serving.

Pro Tips:

Chop the broccoli and apples into small pieces.

 This way, each of your bites has a little bit of all the flavors (and not just an equal bite of broccoli!).

Bring the broccoli to a boil and then place it in an ice bath to cool. 

Make sure you drain the water really well and pat the broccoli dry to make the icing cover it more easily.

Prepare the salad (or at least the sauce) a few hours in advance if you can. 

It tastes best when the flavors have had time to mix with each other.

Stir in the apples with a little lemon juice so they don’t brown.

  • Heat a pot of water. Add the broccoli and cook for just a few seconds to make it toast. Drain the water (or remove the broccoli with a spoon) and allow to cool. Use a paper towel to remove excess water from the broccoli flowers.

For dressing:

  • Bacon.
  • Cheese
  • diced cheddar cheese, grated parmesan or feta.
  • Nuts
  • Use your favorite species, such as pecans or walnuts.
  • Grapes.
